Tropical Recovery Balls

I am pretty lucky in that I have a gorgeous family and some amazing friends. Last year was not my best year to date (to put it mildly) but I survived it with a little (or a whole dollop) of help from my friends/family. One particular lady has been there every time I needed - tears, celebrations, sounding block and drinking buddy, so when she asked me to make these this week, I was only too happy to oblige. Apparently they are the best yet. So these are for you Jane - thanks mate xxx


The recipe is as follows (makes about 12-15) -

  • 1 cup of coconut flour (I used gluten free)
  • 3 scoops of vanilla protein powder
  • 4 tbsp of melted coconut butter
  • 3 tbsp of mixed seeds - again whichever you like but I used chia, flax and sunflower seeds
  • 1 tbsp of mango powder to give them an extra anti-oxidant boost
  • 3 tbsp of desiccated coconut
  • 1/2 cup of frozen tropical fruit - your choice
1 - Pop all the ingredients in the mixer and whizz together
2 - Roll into balls and either pop into the freezer for a crunchy texture, or in the fridge for a truffle like effect
