I have a thing for caramel at the moment, so added some banoffee sauce, only a smidgen, but enough to give the cakes a hint of the taste.

I am pretty lucky in that I have a gorgeous family and some amazing friends. Last year was not my best year to date (to put it mildly) but I survived it with a little (or a whole dollop) of help from my friends/family. One particular lady has been there every time I needed - tears, celebrations, sounding block and drinking buddy, so when she asked me to make these this week, I was only too happy to oblige. So we are into a new year and christmas has been and gone. We were lucky this year - not too much chocolate to munch through, but Elly woke up tired and tearful, and the only way to be able to put her down was to promise nutella and toast. So I thought I’d try making an energy bite at there same time. This little gem is great for after exercise - the nutella does have a higher sugar level than the ingredients I normally use, so best consumed straight after exercise. It would however also combine as a great after school snack for the kids.

This week I have a real treat for you - 3 activebite recipes! The only reason being that the kids and I loved the cookies so much that we devoured them and they are all gone. So I threw together this little number - the sweetness derives from the dried fruit, great fats from the nut butters, and some good protein from the peanuts and oats (I also threw in some protein powder as had a busy day in the gym, but you can leave that out). They don’t need cooking, which means they are great when you are in a hurry.

When I was younger, I loved visiting the fudge kitchen in Cambridge. I’d nip in telling myself I was just going to get a freebie sample, and then buying a huge slab of the latest flavour. Well, when I made these, they did not turn out how I expected, they turned out like a gorgeous chocolatey fudge. Ridiculously moreish, but with only a tbsp of maple syrup and cocoa powder in the whole lot, all the rest of the sweetness come from 12 dates! What is not to like?

I love a brownie. Locally to us, we have the most amazing brownie maker - Choccolicious. They are divine. I have tried a few healthy brownies in my time, but I wanted to create something that used high protein foods, and as little natural sugar as possible, but still giving it its yummy gooey taste. I have used chocolate protein powder in these, but you could easily swop for cocoa or even better cacao. Cacao is a great ‘pick me up’ if you are feeling low, or fancy something sweet, but without all the sugar and calories. It contains theobromine, which has a similar effect as caffeine.

Banana Crumble Energy Bites

A few weeks ago I had some friends round for dinner, and cooked James Duigan’s Banana Crumble recipe, and it was divine - gooey, crumbly, sweet but healthy - just right. So I wanted to make an energy bite that was similar. The oats, quinoa and almonds all provide a great source of natural protein, and the butters are a nice healthy fat. Banana’s are high in potassium, which plays a vital part in controlling blood pressure, so in a good tool in combating high blood pressure

The recipe is -

  • 1 ripe banana
  • 1 tbsp of coconut butter
  • 1 tsp of cinnamon powder
  • 1 cup of oats
  • 1/2 cup of quinoa flakes (or just add another 1/2 cup of oats)
  • 50g ground almonds
  • 2 tbsp of almond butter
  • 30g of vanilla protein powder (or 30g of ground almonds and 3 drops of vanilla essence
  • 2tbsp of maple syrup

1 - mash up the banana and heat up in a pan with the coconut butter/oil and half the cinnamon
2 - pour into a bowl and add the rest of the ingredients, mix week, and then roll into balls
3 - pop in the fridge to cool and store in an air tight container or freeze

Meet Bella, my youngest Viszla. We rescued her from Hungry 18months ago, and have never looked back since. She is nutty, noisy but incredibly loveable. She is always pleased to see us, and loves nothing more to be by my side. So her latest trick is to jump over the garden gate and head round to the studio, sitting at the steps, waiting for one of clients to feel sorry for her and let her in. Today we resorted to tying her up with a skipping rope to the TRX to stop her licking everyone as they stretched!!

She took a fancy to this little recipe.

These remind me of my first recipe - peppermint creams. Me and my best buddy used to make it all the time, much to the dismay of our mums - the creams got stuck to the worktop, the food colouring stained the floor, and we left an icing sugar dusting all over the kitchen. Thankfully this recipe is a whole lot tidier, healthier but still yummy. I would like to dedicate this to my oldest buddy - Gemma - thanks for being you xxx
