Nutty Flapjacks


This week I have a real treat for you - 3 activebite recipes. The only reason being that the kids and I loved the cookies so much that we devoured them and they are all gone. So I threw together this little number - the sweetness derives from the dried fruit, great fats from the nut butters, and some good protein from the peanuts and oats (I also threw in some protein powder as had a busy day in the gym, but you can leave that out). They don’t need cooking, which means they are great when you are in a hurry.

  • 1 cup of oats (I used gluten free)
  • A handful of dried fruit - whichever wish to add
  • A handful of dates
  • 3 tbsp of mixed seeds - again whichever you like but I used chia, flax and sunflower seeds
  • 1 tbsp of honey
  • 1 scoop of protein powder
  • 3 tbsp of peanut butter
  • 3 tbsp of coconut butter

1 - Heat up and melt the butters
2 - Add the other ingredients to the food processor and blitz
3 - Add the melted butters and mix again
4 - Pour into a tray of some sort, lined with cling film, and press down firmly
5 - Pop in the fridge to set
6 - Chop and munch
