Cheesy Eggy Spinach Muffins

Egg Muffins

These are one of my favourite go toe for a Breakfast on the go, or I add them to salad for lunch, So simple and packed full of nutrients, vitamins, minerals and protein. I use a silicone muffin tray as they then fall out really easily rather than losing have your muffin to the dishwasher!!

You’ll need

- 6 eggs
- 2 handfuls of spinach
- 1 red pepper
- A palm full of pancetta or bacon
- 2 handfuls of cheddar or emmental
- Some italian herbs


Whizz all the ingredients in a food processor, then pour into the muffin tray and back at 180 for 30-40 min. Run a knife round the outside and tip them out straight away otherwise they’ll get stuck
