Nutella Bites

So we are into a new year and christmas has been and gone. We were lucky this year - not too much chocolate to munch through, but Elly woke up tired and tearful, and the only way to be able to put her down was to promise nutella and toast. So I thought I’d try making an energy bite at there same time. This little gem is great for after exercise - the nutella does have a higher sugar level than the ingredients I normally use, so best consumed straight after exercise. It would however also combine as a great after school snack for the kids.

The recipe is as follows (makes about 16 to 20) -

  • 1/2 cup of oat flour (I used gluten free)
  • 1/2 cup of ground almond
  • 5 dates
  • 3 tbsp of mixed seeds - again whichever you like but I used chia, flax and sunflower seeds
  • 1 banana - the riper the sweeter taste
  • 2 tbsp of Nutella
  • 2 tbsp of almond butter
1 - Pop the banana and dates in the food processor and whizz
2 - Add the other ingredients to the food processor and blitz again
3 - Roll into small balls
5 - Pop in the fridge to set or freezer if you are in a hurry
6 - Chop and munch
